Pumpkin Spice Oatmeal

One of my favorite fall treats (breakfast, lunch, dinner, snacks- you name it!) is pumpkin spice oatmeal. Almost every day of Thanksgiving break starts with either this or the pumpkin glazed donut muffins! This is SO easy and delicious.

Ingredients

  • 1/2 cup dry oats
  • 1 cup almond milk
  • 4-5 heaping tablespoons of pumpkin
  • 1 tsp pumpkin spice
  • 1/4 cup craisins
  • 1 handful of sliced almonds
  • 1/4 cup marshmallow (optional- I found pumpkin spice marshmallows this year and throw these on top for my oatmeal desserts)

Pumpkin Spice Oatmeal

Put the oats, milk, and pumpkin a bowl together and heat either in the microwave or on the stove. Top with craisins, almonds, and pumpkin spice. Enjoy!

Glazed Pumpkin Donut Muffins

Last fall as I was searching for pumpkin recipes, I stumbled upon these glazed pumpkin donut muffins. I immediately pinned the recipe and made them a few times throughout the fall. What are donut muffins, you might ask? Exactly what they sound like! These are muffins that are very much a donut consistency, and are all together absolutely amazing! I also loved that I could easily make these lactose free! You’ll have to click on the link above to see the recipe in total, but I thought I’d share part of it here:

Ingredients:

  • Butter
  • All purpose flour
  • baking powder
  • baking soda
  • salt
  • cinnamon
  • nutmeg
  • ground allspice
  • buttermilk
  • vanilla
  • pumpkin puree
  • brown sugar
  • eggs
  • powdered sugar
  • half & half (I used almond milk)
  • vanilla
  • pumpkin pie spice

It sounds delicious based just on the ingredients, doesn’t it?

Dip muffins in the glaze. Let dry. Dip again. Let dry. Dip again.

I put a piece of wax paper underneath the wire drying racks to make clean up easy and effortless! The glaze really makes these muffins absolutely delicious. I froze a few of them and enjoyed them later in the season, and they held up surprisingly well in the freezer as well.

Last year I enjoyed one of these on Thanksgiving morning, and they were a perfect way to start the day… after a Turkey Trot anyways 🙂

Happy Thursday! It’s time to get thankful. I want to remind you all to keep hunting for the provisions and blessings in your life, both big and small! That being said, here’s what I’m thankful for today:

I’m thankful that my brother got the plane he wanted! Last Friday I mentioned that my brother in the Air Force was about to find out what plane he’ll be flying for the next 20ish years. Well, he found out on Friday night and according to him, he’s “so pumped”! I’ve talked to him for a few hours since then, and I’m just so happy and thankful that he’s so happy.

I’m thankful that I’ve gotten to watch my brother play soccer the last four years. My other brother is a senior in college, and plays soccer for the school. I feel so lucky to have had the opportunity to watch him grow and become a truly amazing player over the last four years. This past Saturday was senior night, and as I walked out onto the field with him, I felt an immense amount of pride. I’m thankful I’ve been present for these huge moments in his life.

I’m thankful for the ability to ride my bike. I think my days of biking outside are numbered, so I’ve tried to take advantage of the time as I have it. I’m thankful that I even got a bike this year, as last year all fall I biked indoors one morning a week. I’m thankful for my bike and the route that I have to enjoy.

I’m thankful for the beautiful colors. Some days I drive just a little bit slower home from work so I can really take in the colors and beauty around me. My life feels so rushed right now, so I enjoy the moments to slow down and breathe.

I’m thankful for my co-workers. I know I’ve mentioned this several times, but I seriously do appreciate them. I’m specifically thankful for a few of them. They provide so much laughter, encouragement, and support in my day, and I can’t imagine dealing with the crises that I’ve had to deal with the last 2 months without them. They’re awesome.

Hearty Fall Soup

After a warmer than average start to the fall, it has high highs in the mid 60s so far this week! It’s chilly in the morning, nice and warm for after work walks, runs, or bike rides, and cool at night. This soup typed up in this recipe is the type of soup that goes along with boots, scarves, and crisp nights. I was in the mood for a minestrone type of soup, packed with delicious vegetables. Because I wanted to add some protein, I decided that ground up chicken was the game to go. This soup was DELICIOUS, and I was hungry just smelling it as it was slowly cooking in the crock pot.

Ingredients

  • 1 pound ground chicken
  • 40-46 ounces of vegetable or chicken broth
  • 2 large white potatoes
  • 1 small-medium sized butternut squash
  • 1/4 onion
  • 4-5 cloves of garlic
  • 1 cup of mushrooms, chopped into small pieces
  • 3 large handfuls of spinach
  • 1 can of northern beans
  • rotini noodles (optional)
  • red pepper flakes
  • cayenne pepper
  • seat salt
  • cheese

I started by throwing the chicken into a pan and cooking it. While it was cooking, I stuck the butternut squash several times with a fork and put in the microwave for 2.5 minutes to soften it. While both these things were cooking, I peeled the white potatoes and threw them in the crock pot, along with the broth.

Once the squash was done, I took out of the microwave, holding onto it with a few paper towels. It’ll be fairly warm, so use a towel if it’s too hard to get a good grip on. I cut it in half width wise and them cut the skin away. I scooped the inside out and tossed in the trash, and then cut the rest of the squash into bite size pieces before putting it into the crock pot.

Next I threw in the beans, onions, and the garlic cloves (which I finely chopped).

Once the chicken was done cooking, I drained most of the fat away and put red cayenne pepper and salt on for flavor. Once that was mixed together I dumped that into the crock pot.

The mushrooms and spinach I roughly broke into smaller pieces. I only broke up the large pieces of spinach, but most I just tossed into the pot!

I threw red pepper flakes in for extra spice before letting it cook on high for an hour and then on low for about four hours. Enjoy the smell as it cooks:)

If you want to add pasta, you can cook separately or add in for the final part of cooking (just make sure it’s not too long or it’ll get too mushy).

I make a large quantity and so anything extra I make that I know I won’t eat during the week I immediately freeze to enjoy at a later date.

When dinner time hits, I fill a bowl up, heat in the microwave, and sometimes add a bit of cheese on top! I thought that it might taste pretty good as I made it, but I have to say that this far exceeded my expectations, and I ate it 4 nights in a row without ever getting sick of it! YUM!

Happy Thursday! This last week sure flew by quickly, and I can’t believe I’m already at the last Thursday of the month. This month I’ve been really intentional each day to hunt for provisions and blessings in my life, and I’ve found a few every day. It’s funny how these things are there regardless, but we just don’t take the time to look for them, see them, or acknowledge them. That being said, here’s what I’m thankful for this week:

Sunshine and warmth! It’s been an awesome start to fall, and as I sat outside on a bench in the sun at work during my lunch hour, I was thankful. My office doesn’t have windows, so I’m loving the fact that I can get outside for part of my lunch hour and see the sun and feel the fresh air on my face. So many good things about this!

Bike rides. I know biking has been on my lists a lot recently, but I really am so thankful for the hours in my week that I’m able to hop on my bike and hit the road. There’s something so therapeutic to me about pedaling quickly and feeling the wind across my face. On Tuesday, after a 10 hour work day, I hit the road and it felt really fantastic.

Pumpkin Cranberry Oatmeal Cookies. I posted the recipe last fall, and I think I may love it even more this fall! I made them this past weekend, and it’s been so nice to end my day with a few cookies that taste just like fall! YUMMMM.

SLEEP! The last few weeks I’ve had a really hard time adjusting to teaching 6 am pilates classes, so my sleep has been scarce. This last week I’ve slept pretty well, and I’m thankful for finally getting into a fairly good sleep pattern… for now.

Fall decorations! They’re such a little thing, but those little pumpkins and gourds put a smile on my face in my office and living room. Sometimes little silly things do help to brighten life, and fall decorations certainly add a little bit of happiness to my life each day.

You, my readers. I celebrated 2 years of blogging yesterday, and I’m thankful for you and the lessons I’ve learned over these past 24 months.

Cranberry Sweet Potato Quinoa Salad

You know what? I’m not a really big fan of sweet potato, but I go through phases where I can eat it. Quite honestly- if sweet potato always tasted as good as it does in this dish I would eat it all the time. After making this I eagerly scooped up more sweet potatoes when I hit the grocery store again, and that’s saying something- this dish is delicious!! I also think this dish might be perfect for the Thanksgiving and Christmas seasons!

Ingredients (serving size: 2)

  • 2 sweet potatoes
  • olive oil to lightly drizzle over sweet potato
  • cinnamon
  • 1/2 cup of dried cranberries
  • 1/2 cup of slivered almonds
  • 1/2 cup dry quinoa

Here’s What I Did:

First I cut up the sweet potatoes into bite sized pieces. I drizzled olive oil and cinnamon on the potatoes. You could put salt, red pepper, or any other spice on them. I cooked the sweet potato according to these directions.

While this was cooking I rinsed the quinoa and put it and water in my rice cooker. I microwaved about 13 minutes and then let sit for another 7 minutes with the container closed.

After the sweet potatoes cooled I put half of the quinoa, half of the sweet potato, and 1/4 cup each of cranberry and almond on top, with an extra dash of cinnamon.

I didn’t add any additional dressing on top because I didn’t feel like it was necessary! I actually didn’t eat this straight out of the oven. I took it to work on two consecutive days and microwaved for one minute before eating. It was delicious and the entire office smelled like cinnamon- yum!

This was delicious, easy, and very filling. The high amount of protein made it the perfect lunch to fuel me through my workouts after work! It’s also lactose free, which is important to me! This dish holds up really well, so you could easily make it on the weekend and eat it later in the week!

This is the perfect fall and winter dish that would be ideal to bring to any Thanksgiving or Christmas meal!

Pumpkin Cranberry Oatmeal Cookies

For years I’ve been a huge fan of oatmeal cookies. In fact, I’ve used this recipe (Vanishing Oatmeal Cookies-recipe by Quaker Oats) to make oatmeal cookies for six and a half years. About six weeks ago as I was in that half awake, half asleep state, I had a thought (dream?) that made me sit straight up in bed. I wanted to run to the kitchen right away to get baking, but it was the middle of the night, so that wasn’t going to happen. I scribbled down some notes and went back to bed, and didn’t end up making these cookies until two weeks ago. I’ve now made them twice, and they are delicious! This recipe is very much based off of this recipe (just giving them credit!).

Ingredients

  • 2 sticks of butter (I used 1 cup of Earth Balance butter)
  • 3/4 cup of packed brown sugar
  • 1/2 cup of white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup pumpkin puree (or 1 cup depending on preference)
  • 1.5 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon of salt
  • 3 cups of Quaker Oats (or other oats of your choice)
  • 1/2 cup of chocolate chips (optional)
  • 3/4 cup of dried cranberries

Here’s what the step by step looked like:

Mix butter and sugars together, then add egg, vanilla, and pumpkin

Mix flour, baking soda, pumpkin spice, and salt together in separate bowl. Then add slowly to butter/sugar mix.

Then add in the oats and cranberries.

The directions suggest baking at 350 degrees for 8-10 minutes. You’ll have to watch your own oven but I ended up cooking mine for closer to 14 minutes.

The result? Delicious cookies that taste like fall! You can also put this mix into a pan and make pumpkin oatmeal bars! These cookies hold really well and are the perfect snack.

I also feel like they count a little bit as breakfast since it has oatmeal, cranberries, and pumpkin in them (which I eat for breakfast anyways)! Win-win, right? These would be perfect to make for a Thanksgiving meal too. I’m always looking for great desserts that are lactose free, so this is a popular choice for me.

October Recap and November Goals

HAPPY HALLOWEEN! Wow- October FLEW by! As October approached I took a deep breath and jumped in head first into the month, knowing that I would be going non stop almost the entire month. It’s been crazy and fun, and I wish I could have a few more weeks of this fantastic October weather we’ve been having here! Here’s a look back on the last month:

  • I continued to train for my 2nd half marathon! Week 6, Week 7, Week 8, & Week 9
  • I talked about training using the galloway method, and why I love using it!
  • I had fun getting to go on an 8.5 mile run with my brother.
  • I had a great trip to Valencia, Spain! I loved getting to experience a new culture and see a new city, but didn’t love the food poisoning that I got!
  • I did 4 presentations or lectures outside of work, and all went really well!
  • I made some delicious foods! Pumpkin Spice French Toast, Veggie & Bean Quinoa Salad, and BBQ Chicken & Grilled Red Pepper
  • I ran another virtual race, the Cupcake Classic 5k! Sign up for virtual races if you can! They’re so fun and provide some motivation to get out and run!
  • I started to talk about my journey to running!
  • I shared some thoughts on my upcoming half marathon, including my fear of not finishing because of some bad IT band pain 😦
  • I finally got back to doing planks! It took until October 24th to do it, so I didn’t reach my goal of 30 minutes of planks for the month. I did manage to do 16:00 minutes, and I’m just happy to be back doing them again!
  • I attended Homecoming for the college I went to with a group of my friends! It was really fun, and I loved getting to catch up with them!

It’s been a really fantastic month! I’m looking forward to November too, but I just can’t believe we’ve already hit Thanksgiving month! Since I signed up for my half marathon in June, November has been marked as a big month in my head, and I just can’t believe it’s finally here! With racing and traveling and holidays upon us, goals are even more important! Here are some of my goals for the month:

  • PLANKS! Yes, I WILL be more successful at this this month. My goal is to do 40 minutes of planks this month.
  • Finish my half marathon! Any time goal I had went out the window when my IT band started hurting so badly. Honestly, I’m very worried about even being able to finish (but I really hope I do!). I just want to cross that finish line, preferably with a smile on my face.
  • Rehab my IT band. After my race I plan to continue to rest it a bit, continue foam rolling and icing, get new running shoes, and get back to doing some of the exercises I got from sports medicine.
  • Complete the Pile on the Miles Challenge each week.

Monumental Marathon Training Week 9 Recap

Well, this is my last training recap that I will write before the race. I can’t believe it. Next Sunday, when I publish my Week 10 training recap, the race will be over. Almost every week has been a fight in some way, either due to travel, injury, or illness. Nothing really went as planned, but I learned to just go with it and do what I could. What I could do is all that I could do, and that’s ok, even when it isn’t ideal. Because of my IT Band pain, this week I took things down a notch, and tried to keep moving through walking slowly. I couldn’t help it- we had what were probably our last days in the 70s, and I couldn’t make myself do anything but walk outside and enjoy it.

Here’s what the week looked like:

  • Sunday: 1.77 mile walk
  • Monday: 2.15 mile walk
  • Tuesday: 3.53 mile walk
  • Wednesday: 1.53 mile walk, 2:00 min plank
  • Thursday: 1.75 mile walk, 1:45 min plank
  • Friday: REST, 1:45 min plank
  • Saturday: 2.00 mile run, 2:00 plank

Total Miles: 10.73 mile walk + 2.0 mile run=  12.73 miles + 6:00 minutes of planks

So, my mileage was certainly nothing to write home about, but I did manage to finally start doing planks again, which I really haven’t done since March (oops). It was one of my goals for October to start again, and while it took until the 24th, I managed to do it! So, this week was a win in some areas and not so much a win in others. That’s ok. Up next? The Indianapolis Monumental Marathon!

Happy Thankful Thursday, a time to focus on what we’re feeling thankful for this week! Not only is this a good thing to do to keep ourselves focusing on the positive, but it has physical and mental benefits (win-win)! It’s been a much more calm week then the last have been, which has been nice! Anyways, here are a few things I’m feeling thankful for this week:

I’m thankful that I got to see so many great friends from college at Homecoming this past weekend. Sure, I didn’t get much done this weekend, and I certainly didn’t get caught up on sleep, but I had a blast hanging out with some of my friends! One thing I don’t like about life after college is that I have friends spread all over the world, and don’t get to see all of them that often. It was a wonderful weekend full of laughter, reconnecting, Starbucks, walks, and football games!

I’m thankful for beautiful fall weather! This weekend was chilly but sunny. Yesterday and today have been in the upper 70s and sunny. AMAZING and perfect for enjoying fall!

I’m thankful for so many people who blog about their races! I love getting to read race recaps, and I’m glad that people take the time to do them! I love getting to vicariously experience the excitement and energy that they experienced. There are so many inspiring racers out there, and they are inspiring! The next few weeks are huge racing weekends, and I’m so excited for everyone to compete!

I’m thankful my race isn’t for another week and a half. I’ve been having some IT band pain, and I need all the time I can to rest it and for it to hopefully heal a bit!

I’m thankful for ice packs and foam rollers! I’m using these on a 2-3x/day basis right now to try to get my IT band back in tip-top shape before my half marathon! Both of these items were fantastic inventions.

I’m thankful for some extra time in my work week to get some paperwork done. I definitely enjoy seeing clients more than I enjoy doing paperwork, but I also don’t like feeling behind on paperwork. It feels good to check some things off my to-do list in the office after a few busy weeks and my trip to Spain!

I’m thankful for the upcoming weekend! I’ve been gone or had someone visiting me or staying with me every weekend since before my triathlon. It’s been a great few months, but I’m definitely thankful for a weekend to rest, clean, and catch up on my ever growing to do list!
