I love creating different types of oatmeal dishes, and I have fun creating different dessert options for different holidays. In my Easter basket this year, my mom put in a bag of bunny marshmallows, much like the heart marshmallows I used in my Valentine’s Day oatmeal. She immediately said she thought of me when she saw them and figured I could use them in oatmeal. Does she know me or what? This weekend I finally sat down to make my Easter oatmeal, and it was delicious!

Here’s what I included:

  • 2/3 cup dry oatmeal
  • 1.25 cups almond milk
  • 1 tsp chia seeds (my attempt at adding a little bit of healthiness to this)
  • 1 handful of bunny marshmallows
  • 1 small handful of jelly beans

WOW. This was SWEET. I felt a little like I was eating a bowl of lucky charms again, except maybe with a little more nutritional value thrown in there. I certainly did taste like a dessert, and it was delicious! The little marshmallows started to melt once they touched the hot oatmeal, which also made the taste more interesting.

It was delicious, but I think on a regular basis I’ll stick to my regular oatmeal, like my Blueberry Almond Oatmeal, Tropical Oatmeal, or the Strawberry Mango Oatmeal.
